Creamy Baked Pasta Recipe

My oldest daughter loves noodles.  She wants to eat noodles morning, Noon, and night.  The first thing she asks for when she gets up in the morning is for me to make Mac 'N Cheese for breakfast.  I promise that I have never done this and never will do this.  Mac 'N Cheese for breakfast just sounds wrong!  She usually only gets it if we are dining out and even then I try to convince her to eat something with a little protein in it.  Kids!  This dish, although not Mac 'N Cheese, met her need for noodles perfectly.  She loved this dish and gobbled it up.  She also loved it for leftovers the next day or so (3 days worth).  My husband and I also really enjoyed this dish and think you will too.

You will need, Parmesan Cheese, Low fat Cream Cheese, Shredded Cheese, Sour Cream, Diced Tomatoes, Pasta, and Spaghetti Sauce.

Cook the Pasta according to package instructions and you will want them al dente.

In a Saucepan add the Tomatoes, Spaghetti Sauce, and Cream Cheese.

Mix everything together and add a little Salt & Pepper and a little Italian Seasoning to season everything.

Drain the noodles

then add them to the pan with the sauce and mix together well.

Move half the noodle mixture to a 9x13 pan.

Top with Sour Cream

and spread it all around.

Sprinkle Shredded Cheese all over.

Top with the remaining noodle mixture.

Sprinkle with the remaining shredded cheese and the Parmesan Cheese and bake uncovered 375 degrees for 20 minutes.

Creamy Baked Pasta Recipe

4 Cups Pasta uncooked
1 Jar 26 oz Marinara Sauce
1 Can 14 1/4 oz diced tomatoes undrained
6 oz low fat Cream Cheese (3/4 of an 8 oz package)
3/4 C Fat Free Sour Cream
1 1/2 C Shredded Cheese
1/3 C Parmesan Cheese

Pre-heat oven to 375 Degrees.  Cook the pasta in a large saucepan following the package instructions for al dente pasta.  Remove from pan and drain well.  Meanwhile, add the Marinara Sauce, Tomatoes, and Cream Cheese to the same pan and cook on medium heat for about five minutes.  Once Cream Cheese is melted and everything is well blended add the pasta back into the pan.  Stir it all together really well.

Layer half the pasta mixture in a 13x9 in dish and cover with the Sour Cream and half of the Shredded Cheese.  Add the remaining noodles and top with the rest of the Shredded Cheese and Parmesan.

Bake 20 minutes or until heated through and Cheese is melted.
