Oatmeal Banana Muffin Recipe

I am back with more Banana bread!  But this time to mix things up I turned this one into Banana Bread Muffins!  These muffins also have oats in them which changes the texture of the bread.  These were very yummy and we all loved them and I will absolutely be making these again.  I found the recipe here and just baked the little babies for a shorter time than the bread called for. 


You will need Flour (I used both white and wheat, Cinnamon, Baking Soda, Oats, Sugar, Baking Powder, Oil, Salt, Brown Sugar, Buttermilk (I used Milk with a splash of white Vinegar), really Ripe Bananas, and Eggs.  Not pictured but you will also need Vanilla extract.

In a bowl add the Flour, Sugar, and Brown Sugar.

Then add in the Cinnamon, Baking Soda, Salt, and Baking Powder.

Then stir in the dry oats.

Mash up the Bananas.

Combine the Oil and Buttermilk.

Add in the Vanilla Extract.

In a separate bowl crack your Eggs and lightly beat them.

Add the Eggs and mashed Bananas into the Buttermilk mixture.

Now start slowly adding in the Flour mixture.

Yep, I said slowly.

Mix until just combined.

Line a muffin tin with liners and fill the cups about 3/4 full with batter.

Bake 350 degrees for about 20 minutes or until a toothpick comes out clean.

Oatmeal Banana Muffin Recipe

1 C Flour
1/2 C Whole Wheat Flour
1/3 C White Sugar
1/3 C Brown Sugar
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 1/2 tsp Cinnamon
3/4 C Oats
3 very ripe Bananas
1/3 C Buttermilk (I used just shy of a 1/3 C of regular milk with about 1 TBSP of White Vinegar that I let sit for 5 min)
1/4 C Canola Oil
1 1/4 tsp Vanilla
2 Eggs, lightly beaten

Combine the dry ingredients in a medium sized bowl.    Mash the Bananas then combine with the Buttermilk, Oil, Vanilla, and Eggs.  Mix thoroughly.

Slowly add the wet and dry ingredients and mix until just combined.  Pour the batter into a lined muffin tin.  Bake 350 degrees for 20 minutes, until a toothpick comes out clean.
