Chili Lime Enchiladas Recipe

Welcome to my cooking blog!  My name is Jullee and I'm so excited to start this adventure.  I am fairly new to cooking and will be posting my exploits in the art here for your viewing/reading pleasure.  I've spent pretty much the past 10 years eating out and getting fat.  As I've gotten older, fatter, and poorer I've realized that this must stop.  I am going to dive head first into the wonderful world of home cooked dinners.

I have been cooking a little here and there over the last 2-3 years but my recipe repertoire is fairly pathetic.  Every week seems to include tacos, a spaghetti/ boring noodle dish, and something frozen.  I'm excited to expand my culinary horizons and learn how to cook some mighty fine eats.

 It is a tasty enchilada with a surprising sweet chili flavor.

You will need Honey, Lime juice, shredded chicken (or pork) chili Powder, Garlic Powder, Green Enchilada Sauce (2 10oz cans), Shredded cheese, and Tortillas.  I love these Smart & Delicious high fiber ones by LaTortilla Factory.  *Please forgive my terrible back-splash area.  My kitchen is a work in progress*



Take 1 Tbsp Chili Powder, 1 tsp Garlic Powder, 1/3 C Honey, and 1/4 cup Lime Juice

Mix together in a Large mixing Bowl

Add chicken (or pork) and mix well.  Let marinate in Fridge at least 30 minutes.

Add Meat, Cheese, and a bit of Enchilada sauce to keep moist
Then roll into a nice & cute burrito roll.

You will want to spray your pan w/ non-stick spray and lightly cover the bottom of the pan with Enchilada sauce.  Then place your yummy rolls on top of the sauce.  I got six good sized enchiladas in my pan.

Top rolls with the remaining Enchilada sauce and top with cheese.  You can be as generous as you want with the cheese..I went a little slim as I'm trying to lose weight.  Toss in a 350 Degree oven for 30 minutes and bake uncovered.  I put a safety pan underneath just in case it boiled over.  It did not.

After it is done baking you can stick it under the broiler for a quick moment to get the cheese really bubbly and yummy.  I left mine under the broiler for 1 1/2 minutes and it started to burn a little.  Be careful!

Enjoy!!  I topped mine with avocado and it was delicious.


Chili Lime Enchiladas

1.5 lbs pork or chicken, cooked and shredded (I used rotisserie chicken)

Marinade:
1/3 c honey
1/4 c lime juice
1 Tbsp chili powder
1/2 tsp garlic powder

2 (10 oz) cans green enchilada sauce
Shredded cheese (I used a pre-shredded Mexican Blend)
Wheat Tortillas (I used Smart and Delicious high fiber made by LaTortilla Factory)

Mix together Marinade ingredients then add to shredded pork or chicken. Let the meat sit in the marinade for 30 minutes or longer.

Lightly spray pan with non-stick baking spray. Pour green enchilada sauce into pan to coat the bottom. Fill tortillas with shredded meat, desired amount of cheese, and a drizzle of enchilada sauce. Roll and place in dish seam down.

Pour remainder of enchilada sauce over enchiladas and sprinkle more cheese on top. Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place enchiladas nearer the top of oven. Let it broil until cheese is slightly brown and crispy. Watch this..I had mine under the broiler for 1.5 minutes and it started to burn. Enjoy!

  1. This looks sooooo good. I am lazy so I usually use corn tortillas and layer like lasange. Add chopped onions and black olives if you like between the layers. I serve with a homemade salsa and greek yogurt. Yummy and can be gluten free.

    Start with the enchilada sauce, tortillas, meat mixture, a bit of shredded cheese, olives and chopped onion, more sauce etc. end with tortillas on top enchilada sauce and a bit of cheese...bake in oven 350 for about 45 min...I put foil over it and yeah put on a baking pan. Removed about 10 to 15
    min b4 done to brown the cheese
