Caramel Apple Cider Cookies

My next few posts are going to be Christmas in January posts.  Who doesn't love celebrating the holidays in the New Year?  Each Year my sister and I throw a Christmas cookie exchange party.  We always have so much fun planning which cookie recipe to try that year.  For me it is against the rules to make the same recipe more than once and it's also against the rules to make something boring.  I pretty much start looking for a cookie recipe the day after the party is over.  This year I found this little gem and knew I had found a winner.  These cookies were very yummy but they did have one little problem.  After baking and cooling the Caramels get VERY hard.  If you aren't going to eat them fresh out of the oven you will want to warm them up in the microwave for a few seconds so you don't break a tooth.

Caramel Apple Cider Cookies
You will need Caramels, Flour, cinnamon, Unsalted Butter, Salt, Alpine Spiced Apple Cider, Baking Powder, Sugar, Eggs, Vanilla, and Baking Soda.
Mix together the Cinnamon, Flour, Baking Powder, and Baking Soda.

Cream together the Softened Unsalted Butter, Sugar, Salt, and all ten of the Apple Cider Packets.

Looks perfect.

Beat in the Eggs..

One at a time.

Add the Vanilla and mix well.
Gradually add the Flour into the mix.

At this point my hand mixer decided to wimp out on me so I moved the mixture to my sturdy stand mixer.

When everything is mixed together grab a bit of dough, about 2 TBSP and flatten it with a spoon

Place the unwrapped Caramel on top.  I considered using the little Caramel bits so I didn't have to unwrap but chickened out.  After unwrapping all those Caramels I wish I had used them.

Roll the Caramel and dough up into a ball.

*You will want to use Parchment to avoid a giant caramel mess* Bake 350 degrees 11-14 minutes until the cookies are lightly browned.

Place a couple of sheets of parchment on the counter top.

When the cookies are done baking turn them upside down to allow the Caramel to set up.

Enjoy!

2 Sticks softened Unsalted Butter
1 C Sugar
1/2 tsp Salt
1 7.4 oz box Alpine Spiced Apple Cider Instant Original Drink Mix (10 Packets)
2 Eggs
1 tsp Vanilla
3 C Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Cinnamon
1 bag of Caramels

Preheat oven to 350 degrees.

In a bowl mix together the Flour, Bakin Soda, Baking Powder and Cinnamon.

In a separate bowl cream together the softened unsalted Butter, Sugar, Salt, and all ten of the Cider Packets.

Beat the eggs into the creamed Butter mixture one at a time.  Add the vanilla and mix together well.  Gradually add the flour mixture and mix until just combined.

Grab about 2 TBSP of dough and flatten on a parchment lined baking sheet.  Place the unwrapped caramel on the dough and roll up into a ball fully enclosing the Caramel.  Place dough balls about 3 inches apart.  Bake 11-14 minutes, or until lightly browned.  Do not overbake.

When the cookies are done baking Allow the cookies to cool for a minute or two.  Place two sheets of parchment on your counter and turn the cookies upside down on the parchment to cool completely.

Enjoy fresh out of the oven or if the caramel gets too hard after cooling warm them up in the microwave for about 5 seconds.

Enjoy!

Avocado Chicken Parmesan Recipe

When I was younger, just a mean little kid, my Momma noticed..that I didn't like Avocados.  It's true!  I didn't like Avocados until I was 22!  I was kind of a schmuck as a kid.  I am so glad I decided how amazing Avocados are.  I like to eat them on most things now that I am a non schmuck adult.  I saw this recipe on pinterest and knew I had to give it a try.  It was so yummy and even my kids ate it up.  The Avocado gave the dish a surprising creaminess that I really liked.  Give it a try..I know you'll enjoy it too.

You will need Chicken, Eggs, Meat Mallet, Avocados, Cheese, Milk, Bread Crumbs, Marinara Sauce, Flour, and Oil (I used my handy Misto).

Grab a baking sheet and place a sheet of tin foil over it.  You will be glad you did at clean up time.
Place the Flour in a shallow dish.

Do the same thing with the Bread Crumbs.

Grab a zip top baggie and place the chicken inside.  Pound it to an even thickness with your Meat Mallet.

Nice and even.

Add the Eggs and Milk to a bowl.

Mix them together well.

Grab the Chicken and dip it in the Egg mixture covering all sides well.  Notice my fancy nail polish..it is magnetic and used a magnet to create the funky design.  Way cool!
Back to the food.  Lightly cover the Chicken with Flour on both sides.

Shake to remove excess Flour.

Then move the Chicken to the Bread Crumbs and press down to cover well on both sides.

Move the Chicken to the baking sheet and spray with a bit of Oil.  Bake at 400 degrees for about 8 minutes.

Remove from the oven and add a good sized dollop of the Marinara Sauce onto each Chicken.  (I used this handy dandy recipe with the Italian Sausage)
Halve and cut the Avocados into thinish slices.

Add the Avocado slices to the top of each Chicken.

Cover the top with Shredded Cheese and Bake for another 5-7 minutes or until the Chicken is fully cooked.

Bubbly Cheese and yummy goodness.

Enjoy!

Line a Baking Sheet with Tin Foil and preheat your oven to 400 degrees.

Place the Chicken breasts into a zip top baggie and seal it.  Using your meat mallet pound the Chicken until it is an even thickness.

Grab 2 shallow dishes and place the Flour on one and the Breadcrumbs on the other.  Add the Egg and Milk to a shallow bowl and bet them together.

Dip the Chicken in the Egg mixture covering both sides.  Dip the Chicken into the Flour and cover each side lightly making sure to shake off any loose Flour.  Then Place the Chicken in the breadcrumbs and press lightly to generously cover.

Put the Chicken on the Foil lined baking sheet and lightly spray the Chicken with oil.  Bake for about 8 minutes.

Remove the Chicken from the over and place a heaping TBSP of Marinara sauce over the top and spread it around.  Halve and slice the Avocados and place the slices on top of the Chicken.  Top with Shredded Cheese.

Place the Chicken back in the over and bake for an additional 5-7 minutes or until the Chicken is fully cooked.

Enjoy!

Using a Fork cut the butter into the other ingredients.

Pillsbury Biscuit Waffles & Blueberry Syrup Recipe

After my successful attempt at making waffles using canned Cinnamon Rolls I decided to try the same using regular Biscuit dough.  I figured they would turn out great but wasn't sure if I would want regular of Mrs. Butter-worths on top.  I decided to whip up a little blueberry syrup using berries I had that were getting a bit old and honey.  They turned out so good!  I think the blueberry syrup was the perfect topping for these waffles and my kids loved them too.

You will need a Waffle Iron, Canned Biscuits, Honey, Non-stick Spray, and Blueberries.
In a small sauce pan add the Blueberries and a bit of honey over medium heat.

Spray the Waffle Iron well with the Non-stick spray and let it warm up.
Stir the Blueberry mixture occasionally as it start's to bubble and reduce a bit.

Grab four of the Biscuits and place them on the warm waffle iron.  Just a warning..they will squish together a bit so I found that doing two at a time made for better waffles.

Close the top and press down firmly to flatten the dough out a bit.

Cook until the Biscuits are browned and cooked through..about 3 minutes on my waffle iron.

Look how cute they are.

Top with a little Butter and The Blueberry Syrup.

Enjoy!

Pillsbury Biscuit Waffles and Blueberry Syrup Recipe

1Can Pillsbury Grands Biscuits
Non-stick Spray
1-2 Cups Blueberries fresh or frozen
1-3 TBSP Honey (Depending on how sweet you want the syrup..I used about 1 1/2)

In a small sauce pan add the Blueberries and honey over medium heat.  Cook stirring occasionally until the berries bubble up and start to reduce.

Spray the waffle iron with non-stick spray and warm it up.  When it is warm add in the biscuits.  I found that doing two at a time was the best otherwise they get really squished together.  Cook for about 3 minutes until they are golden brown and cooked through.

Top with a little Butter and the Blueberry syrup.
