Ground Turkey Casserole Recipe

I don't use turkey much in my cooking.  I'm pretty much terrified of cooking a giant Thanksgiving type turkey.  I find that ground turkey just doesn't have the same texture as ground beef so I rarely use it.  So most of the turkey I consume is in the form of slices on a turkey sandwich.  I want to use ground turkey more and get more used to it.  I was excited to find this recipe on "Food on the Table" because it sounded delicious and had a couple good reviews.  I altered the recipe a bit because I thought it needed it, and in the end it tasted a bit like Beef Stroganoff to me.  Nice and tasty..plus plenty of leftovers, which I love.

You will need sugar, Tomato Sauce, Cream Cheese, Sour Cream, Shredded Cheese, Ground Turkey, Onion, Bell Pepper, and Egg Noodles.
Dice up half of the Onion and Half of the Bell Pepper.  Save the rest for Eggs or something you make another day.

Spray your non-stick skillet with a bit of non-stick spray and heat over Medium heat.  Then add your onion, bell pepper, and Ground Turkey saute until fully cooked.


Add in the Tomato Sauce and sugar.  Stir together very well.
In a medium bowl mix together the Cream Cheese and Sour cream.
Cook the Egg Noodles according to package instructions, rinse, and place in a baking dish.  Top the Noodles with the Sour cream mixture and spread all around.


Top with the Ground Turkey mixture and spread it all around.
sprinkle with shredded cheese and toss in the oven.
Bake 350 degrees 20-25 minutes until cheese is melted and bubbly.

Ground Turkey Casserole Recipe

1 Lb Ground Turkey
1 15 oz can Tomato Sauce
1 tsp White Sugar
1 8 oz Sour Cream
1 8 oz Cream Cheese
1 12 oz package Egg Noodles
2 C Shredded Cheese
1/2 Medium Onion, Chopped
1/2 Medium Bell Pepper, Chopped
Salt & Pepper to season


Preheat over to 350 degrees.

Pray a skillet with non-stick spray, over Medium heat add the Onion, Bell Pepper, and Ground Turkey, season with Salt & Pepper, and cook until the meat is browned. Drain off the excess fat or blot using a paper towell.  Stir in the tomato sauce and the sugar and set aside.  In a medium bowl, combine the sour cream and cream cheese.  Mix well and set aside.

Cook the Egg Noodles according to package direction.  Drain and place them in a 9x13 inch baking dish.  Top with the sour cream mixture and then the turkey meat.  Spread them out to fully cover the noodles.  Top with the Shredded Cheese.

Bake at 350 Degrees 20-35 minutes until the Cheese is melted and bubbly.

Golden Chicken with Spicy Refried Beans Recipe

I thoroughly enjoy grocery shopping at Costco.  Seeing all of their fun merchandise, tasting the samples, cruising through clothes, books, and basically everything else is so much fun to me.  It's almost like a little trip to the local county fair.  I found a "Costco Healthy Living With Diabetes" magazine on a recent trip and found the following recipe which sounded amazing to me.  We all loved the recipe and I will definitely be making it again.

You will need Chicken tenders, Ground Cumin, Ground Coriander, Salt & Pepper, Olive Oil, Shredded Cheese, Olive Oil, Chopped pepper, Chopped Onion, White Beans, and Salsa

Combine the Cumin, Coriander, salt, and pepper in a medium bowl.

Add the Chicken and toss to coat.


Warm the Olive Oil over medium heat.  Add the chicken and saute until golden brown and cooked through.  Set aside and keep warm.
Using the same pan add the remaining oil and cook up the onion and pepper until beginning to soften. 

Add the Beans and the Salsa and cook, stirring often, until heated through.


Transfer the beans mixture to a medium bowl and using your potato masher mash up those beans.

You want them creamy but still slightly chunky.

I topped my beans with a bit of shredded Mexican cheese.  Yum!  Enjoy!



Golden Chicken with Spicy Refried Beans

2 tsp Grouond Cumin
2 tsp Ground Coriander
1/4 tsp Pepper
1/4 tsp Salt
1 Lb Chicken Tenders
3 tsp Olive Oil, divided
1 Small Onion, chopped
1 Jalapeno Pepper, chopped
2 15oz Cans white Beans, Rinsed and drained
3/4 c Salsa
1/4 Cup Shredded Cheese

Combine the cumin, coriander, pepper, and salt in a medium bowl.  Add Chicken and toss to coat.

Heat 2 tsp of Olive Oil in a large nonstick skillet over medium heat.  Add the chicken and saute until golden brown and just cooked through, 2-4 min per side.  Transfer to a plate and cover to keep warm.

Add the last tsp of Olive Oil to the same skillet and add the onion and pepper.  Cook until they begin to soften, 1-2 min.  Add the beans and salsa and cook, stirring often, until heated through.  Transfer the bean mixture to a medium bowl and mash with a potato masher until creamy but still slightly chunky.  Top with shredded cheese and serve with the chicken.

Chicken and Broccoli Stromboli Recipe

During the summertime I love to cook things that come together quickly, take minimal effort, and my daughter enjoys.  I found this recipe in the April 2011 Prevention magazine and it meets all these criteria.  This was so quick to whip together and it was super yummy.  Give this a try and you won't be disappointed.

You will need Pillsbury refrigerated Pizza Dough, Broccoli, Rotisserie Chicken shredded, and Shredded Cheese.

Chop up the Broccoli into smallish chunks.  The smaller you chop them the quicker they will cook and the easier for small mouths to eat.

Cook the Broccoli in boiling water until it is just tender. 

Spread the Pillsbury Pizza Dough out on a baking sheet and shape into a lovely rectangle.

In the middle of the dough evenly disperse the chicken

Top the Chicken with Shredded Cheese

Then top this with the cooked Broccoli.

Fold the edges of the dough in and seal the dough by pinching.


Cut 4 slashes into the top of the dough to vent and spray with non-stick Cooking spray. Bake at 400 Degrees for 12ish minutes.

You want it to be browned and nice and bubbly on the inside.

Chicken and Broccoli Stromboli Recipe

1 Cup Broccoli florets
1 Pillsbury Refrigerated Pizza Dough
1 Cup Chopped Cooked Chicken
1 Cup Shredded Cheese

Pre-heat oven to 400 degrees.  Steam broccoli florets until just tender.  Stretch the pizza dough to form a rectangle on your greased baking dish.  Sprinkle the chicken, broccoli, and cheese lengthwise down the center of the dough.  Fold the dough over to cover the filling.  Pinch the sides and ends to seal.  Cut 4 slashes to vent and cover with cooking spray.  Bake until browned, about 12-15 minutes.  Slice and serve.
