Bacon Pecan Waffles Recipe

This August has been a strange one.  We have been experiencing a thunderstormy end to an adventure filled summer.  The storms have been beautiful..but frightening for my 3 year old.  For the last few weeks every time she hears a noise that is thunderish she covers her ears and cowers.  Try as I might, I cannot get her to stop being frightened.  I tried to explain thunder, I told her what the different not scary sounds were (airplane, garage door opening, etc.), we tried playing games, and more.  But that kid is just scared!

On a less scary note I'm blogging again! Yep, I decided that I had better get back to it because I have been cooking up some delicious delights.  To start things off I am taking a super easy approach to a gourmet breakfast.  Not too long ago I stayed with my sister-in-law and she made some crazy tasty waffles for us.  She added in a little bacon and some chopped walnuts to the batter and they were glorious.  I was wishing that I could have been a pig and eaten all of them.  So I decided I had better make them when I was in the privacy of my own home where I could have seconds...or thirds..

You will need Milk, Bisquick, an Egg, Walnuts, and chopped Bacon.

Mix the Bisquick according to the waffles instructions and finely chop the Walnuts.

Pre-heat you waffle iron and spray it with a little non-stick spray.  Place the waffle mix on the iron and quickly sprinkle with a bit of the bacon and a bit of the Walnuts over the top.  Close and cook as you normally would.

When done add a dollop of butter, drizzle with maple syrup, and enjoy!
The maple syrup adds a gooey richness to the waffles that can't be beat.  These waffles have a fun savory nutty flavor that really gets you going in the morning.  Very filling and perfect for a busy day.  They are also perfect when you want breakfast for dinner.  Give them a try, you won't be disappointed! Bacon Chive & Onion Crescent Recipe

Recently I spent about 45 minutes doing what I expect to do if I end up in Hell.  Yep, I'm pretty sure you have all guessed that I got family pictures taken.  Is there anything worse in the whole world?  It's funny..I look at the pictures now and smile at how cute my kids are.  But in the moment none of them were behaving!  My oldest was being goofy and kept walking out of the frame.  The middle one was being really shy and kept turning away from the camera so my husband or myself would hold her.  The baby...oh the baby... she went from happy to angry to asleep and back to happy.  Quite a roller coaster considering it was literally only 45 minutes.

Turned out pretty cute considering the baby decided it was time for a siesta.
After the stresses of getting family pictures done I decided I needed a special treat to calm my nerves.  I have enjoyed making things with crescent rolls in the past, like this tasty breakfast delight or this sweet treat, and decided to give the ingredients I had on hand a go.  I ended up making some super tasty Bacon Crescents with Chive and Onion Cream Cheese.

There were no regrets when I gobbled up three of them shortly after they came out of the oven.  In fact the first one I munched on while it was still at the hot magma stage.

There is just something right about enjoying a creamy, bacony, buttery crescent after a stressful evening.  It seems to put the world right again.

I am still convinced that if I end up in Hell it will be an eternity of family pictures being taken.  I'm pretty sure there would be no punishment greater in the world.  I guess I had better get to repenting...

However...I might just have one more before I start.

1 Can Pillsbury Crescent Rolls
Tub of Philadelphia Chive and Onion Cream Cheese
Chopped up Bacon

Separate the  crescent rolls into triangles.  Smear a bit of Cream Cheese on each triangle.  Don't be shy.  Then sprinkle a bit of the chopped Bacon on top.  Really...don't be shy.  Roll the dough up into a sweet little pouch, making sure to seal all edges together.  Bake according to Crescent package instructions.

Let cool about 15 minutes because they seriously come out as hot magma and will burn your tongue!

Sweet & Spicy Bacon Wrapped Chicken Recipe

My life has been so crazy busy over the last few weeks.  I got a new job and have been hustling and bustling trying to get trained.  It hasn't left much time for blogging between that, my family, and my other day to day stuff.  Let's just say that I really live for the weekends right now.  When I get home I want a dinner that takes very little of me.  Quick prep and let the oven take over from there.  I found this recipe here and am very glad I did.  It was very yummy and even the kids liked it.  My husband and I ate the leftovers warmed a bit in the microwave and wrapped in a slice of bread with a bit of yellow mustard on it.  Tasty and quick leftover goodness.  Give it a try when you are tired from all the hustle and bustle of your life.

You will need Bacon, Brown Sugar, Chili Powder, Garlic Powder, Canola Oil spray (or non-stick cooking spray), and Chicken.

Cut the Chicken breasts in half and season both sides with Salt & Pepper.

In a small bowl combine the Chili Powder and Garlic powder.  I went easy on the Chili Powder so my kids would eat the meat..but feel free to pump it up a notch for a spicier meal.

Evenly sprinkle the chicken with the Chili/Garlic Powder mixture on both sides.

I only had enough Bacon to use a half slice per piece of Chicken.  Next time I'll use a whole piece.  Just wrap the Bacon around the Chicken and place in a baking dish that has been sprayed with non-stick spray or Canola Oil spray.

Sprinkle the Brown Sugar over the top of the Chicken and bake at 400 degrees for 30-40 minutes.

Enjoy!

Bacon and Cheese Stuffed Mushrooms Recipe

It's time for an appetizer blast!  Superbowl is on Sunday and have I got a couple of amazing appetizers that will make your party appetizer awesome!  These Stuffed Mushrooms are incredibly quick and easy to make.  They are absolutely delicious and they will leave you and your guests happy even if your team doesn't win. My family has been enjoying this appetizer at family get together's for about as long as I can remember.  Yum!  These are great for any get together from Christmas and Thanksgiving to New Years and Birthday Parties.

You will need  Mmushrooms (try to pick a pack with big ones), Cooked Bacon (reserve a little Bacon Grease), Shredded Cheese, and Garlic Salt.

This part is a bit controversial and I'm just not sure what is right.  But I wash my mushrooms and then let them sit upside down on a paper towel.  If you are against washing you can just dust off any dirt.

Using your thumb just kind of pop the stem off the shroom.

It will make a nice stuffing spot.
They look so nice and ready to fill my belly.

Don't toss those stems!  Oh no..they are going to be a major component of our stuffing.

Grab a skillet and set it over medium heat.  Once it is warm add a couple TBSP of the Bacon Grease.  Bacon Grease makes everything taste better!

Finely chop up the stems.

Add the stems to the warm pan and stir them around really well.

Add in a sprinkle or a few of Garlic Salt.  At this point season delicately because you'll be adding other ingredients in a few.
Crumble the Bacon.

Add the Crumbled Bacon and stir well to incorporate.

Now add the Cheese!  Oh yeah!

Mix it together quickly.  The Cheese will melt really quickly.  Give it a taste and add a bit more Garlic Salt if needed.

Fill the Mushrooms and don't be scared to add a heaping spoonful.  No need to be scared if the topping overfills the shroom..just more flavor awesomeness per bite.  Bake at 375 degrees for about 20 minutes.

Enjoy!  Just a note..these little babies will drip down your chin and onto your shirt if you give them the chance.

Bacon and Cheese Stuffed Mushrooms Recipe

Package of Mushrooms
1 LB Bacon
2 TBSP Bacon Grease
1 Cup Cheese (Sharp Cheddar is amazing in this)
Garlic Salt to taste 1/2 - 2 tsp

Wash the Mushrooms to remove any dirt on them.  If washing with water let sit on a paper towel for a few minutes.  Cook your bacon and reserve some Bacon Grease.  When the Bacon is cool enough to touch crumble it into small bits.

Using your thumb pop the stem off the Mushrooms.  Place the caps on a parchment lined baking sheet for later.  Warm a skillet over Medium heat and add in the Bacon Grease.  Finely chop the removed stems and add to the hot pan and stir well.  Add in the Garlic salt but go a little easy because with the other ingredients you may not need too much.  Add in the Bacon and Cheese stirring to incorporate between each ingredient.  Let cook and melt together.  Taste and add more seasoning if needed.

Spoon the Stuffing into the caps and don't be shy to let the stuffing hang out over the top.  Bake 375 for about 20 minutes.

Bacon Waffles Recipe

I don't know what it is about my pork and pancakes.  They just seem to go together.  My husband loves his pancakes eaten with sausage and plenty of maple syrup.  When I saw this recipe I knew my husband would be in heaven.  Now I am all about doing things as quickly and easily as I can so I cut out a few steps and ingredients from the original recipe.  I used pre-cooked crumbled Bacon and my favorite mix, Bisquick.  These were really nice and paired with the syrup it was a nice savory and sweet combo.  My husband really enjoyed the surprise in his waffles.

You will  need Bacon, Bisquick, Eggs, Milk, and a Waffle Maker.

In a medium bowl add the Bisquick, Eggs, and Milk according to the Bisquick directions.

Mix it all together.

When your waffle iron is warm scoop the Waffle mix on and put a TBSP or so of Bacon on top.  I decided not to mix the Bacon into the mix because I was afraid they would all sink to the bottom.  This way I got plenty of bacon on each waffle.

Cook until golden brown and delicious.

Put a bit of butter and Maple syrup on top of the warm Waffle.

Enjoy!
