Oatmeal Banana Muffin Recipe

I am back with more Banana bread!  But this time to mix things up I turned this one into Banana Bread Muffins!  These muffins also have oats in them which changes the texture of the bread.  These were very yummy and we all loved them and I will absolutely be making these again.  I found the recipe here and just baked the little babies for a shorter time than the bread called for. 


You will need Flour (I used both white and wheat, Cinnamon, Baking Soda, Oats, Sugar, Baking Powder, Oil, Salt, Brown Sugar, Buttermilk (I used Milk with a splash of white Vinegar), really Ripe Bananas, and Eggs.  Not pictured but you will also need Vanilla extract.

In a bowl add the Flour, Sugar, and Brown Sugar.

Then add in the Cinnamon, Baking Soda, Salt, and Baking Powder.

Then stir in the dry oats.

Mash up the Bananas.

Combine the Oil and Buttermilk.

Add in the Vanilla Extract.

In a separate bowl crack your Eggs and lightly beat them.

Add the Eggs and mashed Bananas into the Buttermilk mixture.

Now start slowly adding in the Flour mixture.

Yep, I said slowly.

Mix until just combined.

Line a muffin tin with liners and fill the cups about 3/4 full with batter.

Bake 350 degrees for about 20 minutes or until a toothpick comes out clean.

Oatmeal Banana Muffin Recipe

1 C Flour
1/2 C Whole Wheat Flour
1/3 C White Sugar
1/3 C Brown Sugar
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 1/2 tsp Cinnamon
3/4 C Oats
3 very ripe Bananas
1/3 C Buttermilk (I used just shy of a 1/3 C of regular milk with about 1 TBSP of White Vinegar that I let sit for 5 min)
1/4 C Canola Oil
1 1/4 tsp Vanilla
2 Eggs, lightly beaten

Combine the dry ingredients in a medium sized bowl.    Mash the Bananas then combine with the Buttermilk, Oil, Vanilla, and Eggs.  Mix thoroughly.

Slowly add the wet and dry ingredients and mix until just combined.  Pour the batter into a lined muffin tin.  Bake 350 degrees for 20 minutes, until a toothpick comes out clean.

Nutella Banana Bread Recipe

We buy a lot of Bananas at my house.  I like mine a little on the green side and when they get too ripe I just don't like to eat them anymore.  When they start getting a little freckly I typically turn them into Banana bread.  I saw this recipe for Nutella Banana bread and knew I had to try it.  My sister hates Nutella and anything that is delicious and hazlenutty.  I on the other hand love Nutella.  I think it is so much fun and turns regular toast into a special treat.  This bread turned out really well..but the Nutella flavor didn't show up like I had hoped it would.  Maybe more Nutella next time.

You will need Salt, Vanilla, Nutella, Flour (I used a mixture of Whole Wheat and White), very ripe Bananas, Eggs, Baking Soda, Butter, Sugar and Milk.
Pre-heat oven to 350 degrees and prepare a loaf pan by covering it in Butter or shortening and then sprinkling flour all over it.

Mix together the Flours, Baking Soda, & Salt.

In a separate bowl add the softened Butter in with the Sugar.

Beat until it is all combined.
Add the Eggs in one at a time.

Beat into the Sugar/Butter mixture after adding each one.

Add in the Milk, Vanilla, and Mashed Banana and beat together well.


Add the Flour mixture and mix together until just incorporated.  Don't over mix.

Put the Nutella in a microwave safe dish and nuke for about 15 seconds..just to soften it a little.
Put about 1 Cup of the Banana mixture in separate bowl.

Add in the Nutella.

Mix it together thoroughly.


Add the batter to the bread pan alternating regular and Nutella.
It started out so pretty and went crazy by the end.

Using a butter knife swirl the batters together to make a nice decoration.

Bake for 50-60 minutes or until a toothpick comes out clean.  Look how pretty the top is.  Cool for at least 15 minutes in the pan.

Then let cool on a wire rack.  Try to let it cool a bit before eating.

I just couldn't wait!  Piping hot with a bit of butter.  Enjoy!


Nutella Banana Bread Recipe

2 C Four (I used half Whole Wheat and half White)
3/4 tsp Baking Soda
1/2 tsp Salt
1/4 C softened Butter
1 C Sugar
2 Large Eggs
2 very ripe Bananas, mashed
1/3 C Milk
1 tsp Vanilla
3/4 C Nutella (I will try using more next time to up the Nutella flavor)

Pre-heat oven to 350 degrees.  Prepare a loaf pan by greasing and flouring it. 

In a large bowl mix together the Flour, Baking Soda, and Salt.

In a separate bowl beat together the Sugar and Butter with an electric mixer.  Then add the Eggs in one at a time.  Make sure to beat them in well after you add in each Egg.  Add in the Banana, Milk, and Vanilla and beat together well.

Now add in the Flour mixture and beat until just incorporated.  You don't want to over mix.

Put the Nutella in a microwave safe dish and give it a 15 second zap to soften it up.  Add 1 cup of the Banana batter into a bowl and mix it with the Nutella.  Alternately spoon Nutella batter and regular batter into the bread pan until it is all used.  Use a butter knife to create a swirling pattern in the pan.

Bake 50-60 minutes or until a toothpick comes out clean.  Cool for 15 minutes in the pan then turn out on a cooling rack to cool fully.

Cornbread Recipe

What goes better with Pumpkin Chili than yummy cornbread?  I love cornbread because it makes me think of cold Autumn nights when I was a kid.  We always loved it when my Mom whipped up a good batch of corn bread.  I don't think a pan ever made it thorough the night at our house.  This is a super tasty cornbread and is best with butter and maybe a little honey.  It's got a bit of sweet but it's not overly sweet.  I hate super cakey tasting cornbread..I like mine a bit savory. 


You will need Salt, Egg, Flour, Butter, Corn Meal, Baking Powder, Sugar, and milk which isn't pictured.

In a large bowl add the Corn Meal, Flour, Baking Powder, and Salt.  Give it a good mixing.

Add in the softened Butter, Egg, and Milk.

Mix it all together well.  It probably won't be this color.  I was using a green bowl and for some reason every picture I took came out this odd yellow color.  So I'm going to work with it.  Pour mixture into a greased 8x8 pan and bake 375 degrees 20-25 minutes.

You want to make sure a toothpick comes out of the center clean and then you know it is done.  Yum.  Look how amazing this looks!

Put a bit of butter on while the cornbread is still warm and you will be in heaven.  Enjoy!



Cornbread Recipe

1 C Cornmeal
1 C Flour
3/4 C Sugar
4 tsp Baking Powder
1/2 tsp Salt
1 Egg
1 C Milk
1/4 C Softened Butter

Mix all ingredients together and bake 375 Degrees for 20-25 minutes.  Check with a toothpick to make sure the center is cooked through.  Once the toothpick comes out clean you are ready for business.

Egg in a Hole Recipe

What a name..right?  Really makes you want to dig in.  I was first introduced to this recipe by the one and only Pioneer Woman.  It was such a simple and perfect recipe.  Get your Egg and Toast in one simple and tasty application.  I tried it for giggles and have been in love ever since. 

You will need Bread, Eggs, Salt & Pepper, and Butter.

Don't forget something to cut the hole.  I like to use different shapes and make them a little extra fun.

Punch a hole out of the center of the bread.  Don't throw that hole out!!  That's my favorite part.
Butter both sides of the toast & the holes.

Place the Buttered Bread and the holes into a good warm non-stick pan over no higher than medium heat.  I usually go a bit lower than medium.

Crack and Egg into the holes and season with Salt and Pepper.  Leave the yolk in tact if you like runny eggs or break it up if you (like me) don't.  Let it cook until the egg starts to set.

Flip it over.  Ahh look how nice and toasty the bread has gotten.  The egg white isn't too runny so it remained in tact.  If you try to flip too early the egg just becomes a crazy mess.


Oh brother!  Look at this hole!  Absolutely the best part in my opinion!

Egg in a Hole Recipe

Slice of Bread (I used Granny's Delight High Fiber Bread)
Egg
1 tsp Butter
Cookie or Biscuit cutter

Using the Cookie cutter punch a hole in the middle of the bread.  Butter both sides of the Bread and the Hole.  Warm a non-stick pan over medium low-medium heat.  Place the Bread and the hole in the pan.  Crack your Egg into the empty hole in the bread and season with Salt & Pepper.  Allow to cook until the white starts to set up.  If the white is too runny it will not work out.  Allow other side to cook for a minute or two until egg is fully cooked and bread is toasted.

Pumpkin Banana Bread Recipe

Autumn is my favorite time of year.  I love all the fun holidays, the cool weather, the leaves changing colors and  of course Pumpkin in my cooking!  What is it about pumpkin that is so amazing and delicious?  I love the way it smells, the way it looks, the way it tastes, and everything that can be cooked with it.  I have a lot of fun pumpkin ideas for this fall!!  So excited!  I'm always looking for a supreme banana bread recipe.  This recipe had a nice flavor but it was a little dry.  I liked it but I'm not sure it will be the winner of my whole life. 

You will need Salt, Ground Ginger, Baking powder, Sugar, 2 Very ripe Bananas, Cinnamon, Nutmeg, Flour (I used half White and half Whole Wheat), Eggs, Baking Soda, Brown Sugar, Pumpkin Puree, and Canola Oil.

In a large bowl combine the Flour, Baking Powder, Ground Ginger, Nutmeg, Cinnamon, Baking Soda, & Salt.  Mix together very well.


In a separate bowl combine the Bananas, Canola Oil, Eggs, Sugar, and Brown Sugar.

Add in the lovely Pumpkin puree.  Make sure it is not the canned Pumpkin Pie mixture just the plain Pumpkin.

Beat everything together really well.
Slowly combine the Flour into the Pumpkin mixture.  This is a great job for you little helper.

There we go...all ready for the dance.

Split the dough into two Bread pans that have been greased and Floured.  Bake at 350 Degrees 55-60 minutes until a toothpick comes out clean.

Allow to cool in the pan on cooling racks about ten minutes.

Then remove the bread and allow to cool completely.

Oh boy!
I liked this with just a bit of butter.  Enjoy!



Pumpkin Banana Bread Recipe

4 C Flour (I used half White and half Whole Wheat)
4 tsp Baking Powder
4 tsp Cinnamon
2 tsp Ground Ginger
1 tsp Nutmeg
2 tsp Baking Soda
1/2 tsp Salt
1 15 oz Can Pumpkin Puree
4 Eggs
1 C Sugar
1 C Packed Brouwn Sugar
2 Very Ripe Bananas
3/4 C Oil

Pre-heat oven to 350 Degrees and prepare two loaf pans by greasing and flouring them.

In a large bowl combine the Flour, Baking Powder, Cinnamon, Ginger, Nutmeg, Baking Soda, and Salt.
In a separate large bowl combine the Eggs, Sugar, Brown Sugar, Bananas, Oil, and Pumpkin.  Beat until smooth.

Slowly add the dry ingredients into the Pumpkin mixture.  Spoon dough into the prepared loaf pans.  Bake 55-60 minutes or until a toothpick comes out of the center clean.  Cool in the pans on top of the cooling racks for about ten minutes.  Then remove the bread from the pan and allow to fully cool on the wire racks.

Enjoy!
