7-up Biscuits Recipe

I kept seeing this recipe making the rounds on Pinterest and was curious beyond belief.  Everything said they were the best biscuits and came together so quickly and easily.  I don't drink a lot of soda so we rarely have it in the house.  We just happened to have a little soda left over after my youngest daughters Birthday and it was the perfect opportunity to try these.  I've actually made them twice now and they were pretty darn good!  The first time I made them I used the Sour Cream and the second time I used Fat free plain Greek Yogurt.  I think I liked the flavor better with the Yogurt but they were both very yummy. 

You will need Butter, Sour Cream or Plain Yogurt, Bisquick, and 7-up or Sprite..I used diet and they worked out great.

Add the Bisquick and Sour Cream to a mixing bowl.
Mix them together using a fork. 

The dough gets really crumbly.

Mix in the 7-up or Sprite.

Use a bit of Bisquick to help avoid the dough sticking to the counter top.  I wish I had used at least double the Bisquick.

Place the Dough down on the sprinkled Bisquick.
Using your hands (with plenty of Bisquick on them) pat the dough to about 1/4 inch thickness.

Melt the Butter in the bottom of a 9x9 pan.

Cut the Biscuits, I just used one of my drinking glasses, and place them in the pan.  My biscuits are a little wonky because I didn't use enough Bisquick and the dough was VERY sticky.

Bake 450 degrees for 12-15 minutes or until they are golden brown.  Even Wonky they turned out great.


7-Up Biscuits Recipe
Source:  Plain Chicken

2 C Bisquick
1/2 C Sour Cream or Plain Yogurt
1/2 C 7-up or Sprite..even diet will work
1/4 C melted butter

Preheat your oven to 450 Degrees.
In a large mixing bowl add together the Bisquick and Sour Cream.  Using a fork cut the sour cream into the biscuit mix.  Add in the Soda and mix together.  The dough is very soft and sticky.
Sprinkle a bit of extra Bisquick on your clean counter top and your hands then pat the dough out to about 1/4 inch thick. Melt the butter in the bottom of a 9x9 pan.  Cut the Biscuits with a Biscuit cutter or an ordinary round drinking glass.  Place the cut biscuits in the pan and bake for 12-15 minutes or until they are golden brown and delicious.

Pillsbury Biscuit Donuts Recipe

I've always really loved Halloween.  What's not to love about a holiday where you get to dress up and get loads of candy?  When I was younger there was one house that was so much fun to go to.  They would serve hot cider and homemade Donuts.  I don't know if it was the hot cider on a cold Halloween evening or the Donuts but my friends and I always loved going to that home.  For the past 3 years I've been trying (mostly unsuccessfully) to make delicious homemade Donuts on Halloween.  This year I found this recipe by Paula Deen and was very excited to give it a try.  Donuts in a flash just using Pillsbury Biscuit dough.  My sister was very skeptical and thought they would be terrible.  But they ended up being the best Donut I've ever made.  They were a bit more dense than store bought Donuts but they tasted great and were so easy to cook.

You'll need Pillsbury Biscuits, Sprinkles (I ended up not using them but they would have been a nice touch), Powdered sugar, Sugar, Cinnamon, and Cocoa Power.
Oh, and don't forget the Canola Oil.  Plenty of Canola Oil.  I think I used about half a bottle.  Start by warming up the oil in a Large pan.  You will need a thermometer and you want the oil to be about 350 degrees.

Separate the Biscuits and set them out on the counter.

I used the lid to my oil and cut the Biscuits into Donuts.

In a bowl add the Cinnamon and Sugar.

Mix it together well.

In another bowl add together the Powdered Sugar, Cocoa Powder, and Milk.

Mix it together well.
Once the Oil is good and hot add the Donuts, a few at a time. 
Try to regulate the heat to avoid super oily Donuts.
The donuts only need to cook for a few minutes.  Watch them and you'll be able to see as they get brown and ready to turn.
Perfect!  Lovely browned Donuts.  You also want to make sure they are fully cooked..nobody likes a doughy Donut.  When they are done cooking set them on a paper towel lined baking sheet to cool off a bit. 

When they are cool enough to touch you can dip the Donuts in the Cinnamon/Sugar

or the Glaze. 

I personally decided to do a little of each.

But the Chocolate were amazing too.

Don't forget to cook up the Donut holes.  They are just so much fun to eat.

Pillsbury Biscuit Donuts Recipe

Canola Oil
2 Cans Large Pillsbury Buttermilk Biscuits
1 tsp Ground Cinnamon
1/4 C Sugar
1 C Powdered Sugar
3 TBSP Milk
1/4 C Cocoa Powder

 In a heavy bottomed pan heat 2 inches of Canola oil to 350 degrees.  While the oil is heating stir together the Cinnamon and Sugar in one bowl.  In another bowl whisk together the Powdered Sugar, Cocoa Powder, and Milk really well to avoid lumps. 

Lay the Pillsbury Biscuit dough out and cut a hole in the middle.  I just used the lid to my oil bottle so pretty much anything will work.  Add the Dough to the oil and cook until it is golden brown.  Flip the Donut and cook the other side until it is golden brown.  Repeat the cooking with the Donut holes.  Keep an eye on the temperature and try to maintain as close to 350 as you can.  This is where I get into trouble because if the oil temperature varies too much you will end up with oily Donuts.  When they are done cooking let them cool on a paper towel lined baking sheet.  Once they are cool enough to touch dip them in the Cinnamon/Sugar or the Chocolate Glaze.

Savory Peach Chicken Recipe

I love peaches.  They are absolutely one of my favorite fruits and I eat them like candy in the summer time.  I cry a little on the inside for the peaches when fall comes creeping in.  I usually eat them plain but I recently had several that needed to be used up quickly.  I didn't want to do the typical peach cobbler type sweet recipe.  I wanted to try something different..something savory.  I found this recipe and boy was I glad I did!  This recipe was so tasty and amazing.  The chicken ended up being super juicy and the hint of sweet from the peaches and juice plays so well with the other flavors.  Try this the next time you have peaches and you will be so happy you did.  This winter I'll be trying it with frozen peaches and I'm hoping it will taste just as awesome.  I'll update how that adventure turns out.

You will need Soy Sauce, Orange Juice, Chicken Broth, Brown Sugar, Salt & Pepper, Canola Oil, Peaches, Rice Vinegar, Sliced Almonds, Ginger, Garlic, and Chicken.

Warm a large non-stick skillet over medium heat and add the Canola Oil.

Season the Chicken with Salt & Pepper.
Add the seasoned Chicken to the hot pan and brown both sides.

In a bowl mix together the Soy Sauce, Rice Vinegar, and  Brown Sugar.

Add in the Orange Juice.

Remove the browned Chicken.  I always get excited and remove the chicken before it is fully browned.

Add the Ginger and Garlic and cook, stirring, for 30 seconds.
Add the sliced Peaches, Soy Sauce/OJ mixture, and Chicken Broth to the pan.  Turn the heat up to High and cook, uncovered, for 5 minutes.  Stir every now and then while the sauce thickens.

Add the Chicken back to the pan making sure to nestle it in the Peaches and sauce.

Cover and cook until the chicken is cooked through.  About 5-6 minutes.

Meanwhile in a separate non-stick pan over medium heat toast the Almond slices.  Make sure to stir often to avoid burning.

Top the Chicken with the Toasted Almonds and Enjoy!

Savory Peach Chicken Recipe

1 TBSP Canola Oil
4 Boneless Skinless Chicken Breasts
2 TBSP Brown Sugar
2 TBSP Soy Sauce
2 TBSP Rice Vinegar
1/4 C Orange Juice
1 tsp freshly grated Ginger
2 Cloves of Garlic, Minced
1/2 C Chicken Broth
4 Large ripe peaches, cut into slices or 2 10 oz packages frozen Peaches
2 TBSP Sliced Almonds
Salt & Pepper to taste

Heat the oil in a large non-stick skillet over Medium heat.  Season the chicken on both sides with salt & Pepper.  Add the Chicken to the hot pan and cook until each side is browned.  Meanwhile combine the Brown Sugar, Soy Sauce, Rice Vinegar, and Orange Juice in a bowl and set aside.  Once the Chicken is browned remove it from the pan and set aside.

Add the Ginger and Garlic to the skillet and cook for about 30 seconds while stirring.  Ad the Soy Sauce/OJ mixture, Chicken Broth, and Peaches to the pan.  Increase the heat to High and cook, uncovered, about 5 minutes.  Stir occasionally while the sauce thickens and the peaches soften.  Add the Chicken back into the pan and be sure to nestle it in with the sauce and Peaches.  Lower the heat to Medium low.  Cover the pan and cook until the Chicken is cooked through.

While the Chicken is cooking add the Almonds to a dry non-stick skillet over Medium heat.  Stir frequently while the Almonds toast.  Be sure to watch them so they do not burn.

Serve the Chicken with the sauce and top with 1/2 TBSP of the toasted Almonds.

Scarecrow Party Mix Recipe

I wanted some kind of a Halloween snack mix for my baby's Birthday party last month.  I wasn't sure what to do or get when I came across this gem of a recipe on Pinterest.  I love pinterest for finding all kinds of fun ideas.  I made a few changes to what I felt would maximize the tastiness of the mix and I think it turned out great.  My sister who is evil and rascally tried to dig through the mix to pull out all of the Reeses Pieces.  She is a hater of Candy Corn so the mix wasn't her favorite but I really enjoyed it.

In a Large Bowl add about 2-4 cups of Prepared Popcorn with nuts.  I used a Target brand but Crunch n' Munch or anything like that would work perfectly.

Top with 2-4 cups of Pretzels, and a cup or two of Candy Corns.

Add in a sprinkling of Reeses Pieces.  These are so yummy and I'm pretty sure they are made in Heaven.

Mix the goodness together!
Then I tossed in a bag of Goldfish S'mores and boy was I glad I did!  It added the perfect graham and Mellow action that this mix needed.

Stir everything together and Enjoy!

2-4 Cups Pretzles
1-2 Cup Candy Corn
1-2 Cup Reeses Pieces
1 package Goldfish S'mores
