Bacon Pecan Waffles Recipe

This August has been a strange one.  We have been experiencing a thunderstormy end to an adventure filled summer.  The storms have been beautiful..but frightening for my 3 year old.  For the last few weeks every time she hears a noise that is thunderish she covers her ears and cowers.  Try as I might, I cannot get her to stop being frightened.  I tried to explain thunder, I told her what the different not scary sounds were (airplane, garage door opening, etc.), we tried playing games, and more.  But that kid is just scared!

On a less scary note I'm blogging again! Yep, I decided that I had better get back to it because I have been cooking up some delicious delights.  To start things off I am taking a super easy approach to a gourmet breakfast.  Not too long ago I stayed with my sister-in-law and she made some crazy tasty waffles for us.  She added in a little bacon and some chopped walnuts to the batter and they were glorious.  I was wishing that I could have been a pig and eaten all of them.  So I decided I had better make them when I was in the privacy of my own home where I could have seconds...or thirds..



You will need Milk, Bisquick, an Egg, Walnuts, and chopped Bacon.

Mix the Bisquick according to the waffles instructions and finely chop the Walnuts.

Pre-heat you waffle iron and spray it with a little non-stick spray.  Place the waffle mix on the iron and quickly sprinkle with a bit of the bacon and a bit of the Walnuts over the top.  Close and cook as you normally would.

When done add a dollop of butter, drizzle with maple syrup, and enjoy!
The maple syrup adds a gooey richness to the waffles that can't be beat.  These waffles have a fun savory nutty flavor that really gets you going in the morning.  Very filling and perfect for a busy day.  They are also perfect when you want breakfast for dinner.  Give them a try, you won't be disappointed! Apple Ring Pancakes Recipe

I am at it again with some new pancakes!  These are no regular pancakes though.  They are extra fancy Apple Ring Pancakes!  These were a lot of fun to make and I really enjoyed them.  My kids liked them quite a bit and my husband loved them.  In fact I made a few plain pancakes with the leftover batter and my husband grabbed one of those and was terribly sad when he noticed that the Apple was missing.  I found the original recipe here.  These came together quickly and were a lot of fun.

You will need Bisquick, Lemon Zest, Apples, Egg, Milk, Nutmeg, Cinnamon, and Ground Cloves. 

Mix together the Bisquick, Egg, and Milk.

Add in the spices

And the Lemon Zest.


Core and peel two Apples. 

Slice them into even sized rings.

Drop the ring into the pancake mix.

Turn it over so both sides are evenly coated.

Place the Apples on a warm griddle that you have buttered.

Cook until Golden Brown and delicious.  I served with a bit of syrup and Butter.  Enjoy!


Apple Ring Pancakes Recipe

 2 medium Apples, Cored & Peeled
1 C Bisquick
1 Egg
1/2 C Milk
Zest of 1/2 Lemon
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Ground Cloves

In a medium bowl add the Bisquick,  Egg, and Milk.  Mix it together well.  Add in the spices and mix thoroughly.


Cut the Apples into 1/8 inch slices.  Drop the apple into the batter, making sure to coat both sides.  Warm a Griddle over Medium heat and butter it well.  Cook the apples slices until they are golden brown on both sides.  Serve with a little Butter and Syrup.

Enjoy!

Approximately 4 servings (Pancakes prepared with no toppings)

Bacon Waffles Recipe

I don't know what it is about my pork and pancakes.  They just seem to go together.  My husband loves his pancakes eaten with sausage and plenty of maple syrup.  When I saw this recipe I knew my husband would be in heaven.  Now I am all about doing things as quickly and easily as I can so I cut out a few steps and ingredients from the original recipe.  I used pre-cooked crumbled Bacon and my favorite mix, Bisquick.  These were really nice and paired with the syrup it was a nice savory and sweet combo.  My husband really enjoyed the surprise in his waffles.

You will  need Bacon, Bisquick, Eggs, Milk, and a Waffle Maker.

In a medium bowl add the Bisquick, Eggs, and Milk according to the Bisquick directions.

Mix it all together.

When your waffle iron is warm scoop the Waffle mix on and put a TBSP or so of Bacon on top.  I decided not to mix the Bacon into the mix because I was afraid they would all sink to the bottom.  This way I got plenty of bacon on each waffle.

Cook until golden brown and delicious.

Put a bit of butter and Maple syrup on top of the warm Waffle.

Eggs
Milk
Bacon Bits

Pre-heat your Waffle Iron.

Prepare the Bisquick waffle mix according to package directions.  When the Waffle Iron is hot add about 1/2 Cup of the prepared mix and top with a TBSP of Bacon Bits.  Close the Waffle Iron and cook until Waffle is golden brown and delicious.

Top with Butter and Maple Syrup.

7-up Biscuits Recipe

I kept seeing this recipe making the rounds on Pinterest and was curious beyond belief.  Everything said they were the best biscuits and came together so quickly and easily.  I don't drink a lot of soda so we rarely have it in the house.  We just happened to have a little soda left over after my youngest daughters Birthday and it was the perfect opportunity to try these.  I've actually made them twice now and they were pretty darn good!  The first time I made them I used the Sour Cream and the second time I used Fat free plain Greek Yogurt.  I think I liked the flavor better with the Yogurt but they were both very yummy. 


You will need Butter, Sour Cream or Plain Yogurt, Bisquick, and 7-up or Sprite..I used diet and they worked out great.


Add the Bisquick and Sour Cream to a mixing bowl.
Mix them together using a fork. 

The dough gets really crumbly.

Mix in the 7-up or Sprite.

Use a bit of Bisquick to help avoid the dough sticking to the counter top.  I wish I had used at least double the Bisquick.

Place the Dough down on the sprinkled Bisquick.
Using your hands (with plenty of Bisquick on them) pat the dough to about 1/4 inch thickness.

Melt the Butter in the bottom of a 9x9 pan.

Cut the Biscuits, I just used one of my drinking glasses, and place them in the pan.  My biscuits are a little wonky because I didn't use enough Bisquick and the dough was VERY sticky.

Bake 450 degrees for 12-15 minutes or until they are golden brown.  Even Wonky they turned out great.

7-Up Biscuits Recipe
Source:  Plain Chicken

2 C Bisquick
1/2 C Sour Cream or Plain Yogurt
1/2 C 7-up or Sprite..even diet will work
1/4 C melted butter

Preheat your oven to 450 Degrees.
In a large mixing bowl add together the Bisquick and Sour Cream.  Using a fork cut the sour cream into the biscuit mix.  Add in the Soda and mix together.  The dough is very soft and sticky.
Sprinkle a bit of extra Bisquick on your clean counter top and your hands then pat the dough out to about 1/4 inch thick. Melt the butter in the bottom of a 9x9 pan.  Cut the Biscuits with a Biscuit cutter or an ordinary round drinking glass.  Place the cut biscuits in the pan and bake for 12-15 minutes or until they are golden brown and delicious.

Pumpkin Pancakes Recipe

Pumpkin!!  I love pumpkin in both sweet and savory dishes.  If I see a recipe with Pumpkin in it chances are I'll give it a try.  A long time ago I read something that suggested putting plain Pumpkin Puree in pancakes to up the nutritional content.  I was so curious that I decided to give it a try.  It gives the pancakes a Pumpkiny flavor that I really like.  I don't add any sugar or spices to it so it's a very natural Pumpkin flavor.  You could add pie like flavors if you want to but I like them just plain and simple.  I suggest you give it a try using your favorite pancake mix.

You will need Bisquick (or pancake mix of your choice..or make your own), Eggs, Pumpkin Puree, and Milk.

Put your Bisquick, Milk, and Eggs into a medium sized bowl.

Add in the lovely orange Pumpkin Puree. 

Mix it all together but try not to over mix.

Warm up your favorite griddle over medium heat.

Measure out 1/4 cup of the batter per pancake and let them cook a couple minutes.
These don't bubble up the same as regular pancakes so I watch for the bottom to look like it's starting to cook and a few bubbles to form on the top.

When you flip they should be a lovely brown color.

I stack them up as I cook and serve as I go.

I like to top them with a bit of butter and a sprinkling of Sugar.

Oh boy!  These are also great with maple syrup and Cinnamon/Sugar.

Pumpkin Pancakes Recipe (made with Bisquick)

2 C Bisquick
1 C 1 % Milk
2 Eggs
1 C Pumpkin Puree

Pre-heat a griddle over medium heat.  In a large bowl combine all ingredients and mix together until just combined.  Try not to over mix.  Measure 1/4 Cup of batter and place on hot griddle.  Allow to cook 3 or so minutes per side or until they are cooked through.  The pancakes will have a nice browned color.

Serve with Almost anything you like.  I prefer them with a little Butter and a sprinkling of Sugar.
