Ginger Tilapia & Swiss Chard Recipe

Fish.  I spent the majority of my youth hating all fish including tuna fish.  I wouldn't eat tuna fish sandwiches and whenever my Mom made fish for dinner I would only eat side dishes.  In my early twenties I branched out and tried salmon and decided that it wasn't too bad.  When I was dating my husband many years ago his father made lunch and cooked up a tuna melt that tasted amazing.  After those experiences I decided to eat more fish.  I still don't eat it as often as I should but I like fish now.  For the most part.  I don't recall where I found this recipe but we really enjoyed it.  It was a very light dinner that was just perfect for a warm evening.

You will need Swiss Chard, Tilapia (I used a fish called Basa), Chicken Broth, Salt & Pepper, Ginger, Onion, and Canola Oil.

Grate the Ginger.

Season the fish with Salt & Pepper and cover with some of the Ginger.

Warm a non-stick skillet over medium heat and add the Canola Oil.

Toss in the Fish and cook 3 minutes.

Turn over and cook the other side 3 minutes or until fish flakes easily. 

Meanwhile Chop up your onion.

Remove the stems and chop up the Swiss Chard leaves.

When fish is done remove from pan and keep warm.

Add a bit more Canola Oil, Onion and remaining Ginger to the same pan and cook about a minute.

Increase the heat to medium high and add the Swiss Chard, broth, and season with Salt & Pepper.

Cover and cook until wilted about 3 minutes.

Serve fish with the Swiss Chard..and Enjoy!


Ginger Tilapia & Swill Chard Recipe

4 Tilapia fillets
1 1/2 TBSP Grated Ginger
1 1/2 TBSP Canola Oil
1 Onion Chopped
1 Bunch Swiss Chard, stems removed and leaves roughly chopped
1/2 C Chicken Broth
Salt & Pepper to taste

Sprinkle each fish fillet with Salt & Pepper then cover with 3/4 TBSP of the Ginger.  Heat 1 TBSP of Oil in a large nonstick pan over medium heat.  Cook the fish 3 minutes per side until it fakes easily.  Remove and keep warm.

Heat the remaining oil and cook the onion and remaining ginger for about 1 minute.  Increase the heat to medium-high and add the swiss chard, Broth, and season with Salt & Pepper.  Cook about 3 minutes until the chard is wilted.

Speedy Tuna Noodle Skillet Recipe

I recently posted a recipe where I used crazy low calorie tofu shirataki noodles.  They are only 40 calories for the entire bag of noodles and they are very noodle like.  I had purchased two packages and wasn't sure what I wanted to make with the second bag.  I am a lover of food television.  I like to watch food shows when I'm bored or when I have my 3 year old around and don't want her to see the shenanigans that go on when"The Real Houswives of New Jersey" is on.  I find food shows to be very informative and fun.  I caught an episode of "Hungry Girl" and she just happened to be making a quick and easy recipe with those crazy noodles.  So I decided to whip up a batch of the Hungry Girl Speedy Tuna Noodle Skillet recipe.  I decided to change it up just a bit by adding peas.  This wasn't a super great recipe..but it was fast and terrifically easy.  If I make it again I'll change it up a little.  I felt that it was a little bland and a little on the squishy side.


You will need Garlic Powder, 98% Fat Free Cream of Mushroom Soup, Tuna in water, Shirataki Noodles, and Peas.

Rinse the noodles according to package directions.

Start cooking the Noodles according to the package directions.  They cook very quickly so move on to the next step ASAP.
In a skillet add the Cream of Mushroom Soup


Add in some thawed Peas

and a can of Tuna Fish.

Season with Salt & Pepper and Garlic Powder.  Mix it all together really well.

When the noodles are done cooking drain them and place them on a paper towel.

You will want to dry the noodles very well.

Place the noodles in the skillet and stir to combine.

Enjoy!


Speedy Tuna Noodle Skillet Recipe

1 Package Shirataki Noodles
1 Can Tuna in water
1 Can 98% Fat Free Cream of Mushroom Soup
1/2 Cup frozen Peas, thawed
Garlic Powder to taste
Salt & Pepper to taste

Prepare Shirataki noodles according to package instructions.  Meanwhile, over medium heat add the soup to a skillet along with the Tuna, Peas, and seasonings.  Stir everything together well.  When the noodles are done add them to the skillet as well and stir well to combine.

Peanut Butter S'mores Crescent Recipe

After making this yuminess I started to wonder what other amazing things I could do with Pillsbury Crescent rolls.  I started devising good ideas in my mind and decided to try making a yummy Peanut Butter S'mores crescent.  Can I just tell you how tasty these are!  Yum!  I suggest making these when you have company..cause they are a little on the addictive side.

You will need Peanut Butter, Chocolate, Pillsbury Crescent Rolls, and Marshmallows.

Spread the Crescent roll dough out on a parchment lined baking sheet.  Spread about 1/2 TBSP of Peanut butter on each Crescent triangle.

Place 2 chunks of Chocolate near the large end of the Triangle.

Cut each Marshmallow into 4 pieces and place 2 chunks on top of the Chocolate.

Roll the Crescent dough up into little pouches and try to seal them as well as you can to avoid too much yuminess oozing out.

Bake 375 degrees 11-12 minutes until they are golden brown and amazing.  Is anyone else's mouth watering at this point?

Peanut Butter S'mores Crescent Recipe

Can Pillsbury Crescent Rolls
Marshmallows
Chocolate
Peanut Butter

Line a baking sheet with Parchment paper.  Unroll the crescent dough and spread each triangle with about 1/2 TBSP of Peanut Butter.  Place 2 chunks of Chocolate near the large end of the Triangle.  Cut your marshmallows into 4 chunks and place two chunks per triangle on top of the chocolate.  Roll the triangle up into a pouch sealing the edges well.  Space out on the parchment lined baking sheet and bake 375 degrees 11-12 minutes.
