Potato Pizza Recipe

I love pretty much all things pizza.  I'm always looking for a healthier version of pizza that still quenches my pizza thirst.  This recipe was pretty good and I definitely recommend it.  My three year old who doesn't like potatoes very much just picked off and ate the pizza toppings and left the potato for the rubbish bin.  Kids!  I got the baked potato recipe here and the potato pizza recipe here.

You will need potatoes, Turkey Pepperoni, Grated Cheese, Olive Oil, Lawry's Season Salt, and the leftover Marinara sauce from your Spaghetti Taco Recipe

Clean and dry your potatoes really well.


Using a fork poke the potato in several spots.  You want to dig the fork in good and deep to help steam release as it cooks.



Add a bit of Olive Oil to a bowl.  Dip your potatoes into the oil  Then rub the oil all over the potato to coat.


Season the potato skins with Lawry's seasoned Salt.  Yummy!

Place the potatoes right on the oven rack but put a baking sheet underneath just in case a mess happens.

Remove from oven about an hour later or when they are good and soft.

Cut the potatoes in half and scoop out a little of the flesh to create a little well.

Cover each half with Marinara sauce, grated cheese, and pepperoni.  stick baking sheet back in the over for about 5-10 minutes until the cheese is melted.

Potato Pizza Recipe

4 Russet Potatoes
2 TBSP Olive Oil
1-2 TBSP Lawry's Seasoned Salt
1/2 Cup grated Cheese
24 Slices Turkey Pepperoni
1 Cup Marinara Sauce

Wash and dry potatoes very well.  Put the Olive Oil in a bowl and dip each potato in and then rub the oil all around.  Cover with Lawry's Seasoned Salt.  Heat oven to 350 Degrees and place the potatoes directly on the oven rack.  Place a baking sheet underneath to catch any messes.  Bake 1 hour or until potatoes are tender.

Cut Potatoes in half and scoop out a little of the flesh to create a well.  Cover each half with Marinara, Cheese, and Pepperoni.  Place on baking sheet and bake about 5-10 minutes or until cheese is melted.  Enjoy!

Oven Roasted Pepper Recipe

I've always wanted to try roasting peppers at home but didn't think I could do it without a gas range or a BBQ grill.  Recently I got a bunch of Anaheim peppers that I needed to use up and in my research I found that I could roast them in my oven with my Broiler.  I was so excited to try it out!  It was very simple and they turned out so great.

You will need Peppers.  These pretty little beauties are Anaheim Peppers.


Cut the peppers in half you can keep the stem on if you want.  Then you remove the seeds and membranes.

Place your pepper on a foil lined baking sheet and you will smash it down a little with your hand.  You may want to spray the foil with a bit of non stick spray to help avoid sticking.  Notice my fancy Crackle nail polish.  Fun stuff.

Turn on your broiler and put the oven rack up to the top.

Cook until the pepper skin gets really good and charred.  Check at 5 min and then every 2-5 minutes so they don't burn. 

Stick the peppers in a zip top bag and seal.  Let them sit for 15 minutes.

Now we need to skin them.  The skin actually peels off pretty easily but I did need to use a knife here and there to help out.

Yummy!  I cut the tops off because I was using these in a chili and not stuffing them.  Enjoy!

Spaghetti Taco Recipe

Yes, I made the famous iCarly Spaghetti Tacos!  I don't know what it was about this recipe that called out to me.  Perhaps it was the opportunity to mix Marinara and taco seasoning.  Or perhaps the opportunity to put spaghetti noodles in my taco shell.  Or perhaps it was just the absolute absurdity of making Spaghetti Tacos that appealed to me.  But whatever it was when I heard about this I just had to try it.  The idea came from a gag on a Nickelodeon show and apparently it is taking the world by storm.  So grab your umbrella and give em a try.

You will need Marinara Sauce, Taco Shells, Ground Beef, Tabasco Sauce, Spaghetti, Onion, Avocado, Pepper, Taco Seasoning, Salsa, Sour Cream, Shredded Cheese, and Lettuce.

Start by warming up a non-stick skillet.  Add your chopped up Onion and Pepper.  I used a lovely Anaheim Pepper but you could use any kind of pepper.  Then you will add your meat and brown it all up.

You will add Taco Seasoning to the meat mixture.  I used about a Tablespoon but think next time I would use 2.   And yes, I did just say next time.

Now cook half a package of Spaghetti noodles according to package directions.


Add the Marinara into the meat mixture.  Weird, Marinara and Taco meat.  Strange friends to say the very least.

When the Spaghetti is done drain it well and add it back into the pan.  Add a few dashes of Tabasco Sauce to spice it up a little.  I just added a few dashes because I have a little one who is anti hot and spicy.



Now mix together your Spaghetti and the marinara taco meat mixture.  Weird.
Now get your taco shell ready for the adventure of a lifetime.  I used these fancy flat bottomed Old El Paso shells and found them to be useful.  Although a bit large for my 3 year olds little mouth.



Add a bit of TacoMeat /Marinara mixture and top with shredded cheese.  I like to get the cheese just on top of the warm meat mixture to help it melt a bit.


Then add lettuce and avocado chunks.


Top with plenty of Salsa and Sour Cream.

1/2 package Whole Wheat Spaghetti Noodles
Taco Shells
1 Lb Ground Beef
1/2 Onion Chopped
Pepper Chopped
1-2 TBSP Taco Seasoning
1/2 Jar Marinara Sauce
Few Dashes Tabasco Sauce

To top:
Avocado chopped
Lettuce chopped
Salsa
Sour Cream
Shredded Cheese
