Baked Lemon Shrimp Recipe

I was cruising around Pinterest and found a shrimp dish that looked really tasty.  It wasn't linked to a webpage so I'm not sure where the recipe came from.  It just had a few instructions listed on the pin and I kind of winged it from there.  This meal was so delicious!  My kids devoured their shrimps and my oldest asked for seconds.  She rarely asks for seconds so you know it had to be yummy.  I served this with a little couscous and it turned out perfectly.  I will absolutely be making this again.

You will need Shrimp, Italian Seasoning, Garlic, Lemon, Butter, and Salt & Pepper.

Melt 2 TBSP of Butter in a microwave safe dish.  also get a rimmed baking sheet ready.

Mince your Garlic..I used my handy dandy mincing tool that I love.

Zest the Lemon.

Then cut it into thin slices.

Arrange the Shrimps, Garlic, and Lemon slices on the baking sheet.

Sprinkle with Italian seasoning, Salt & Pepper, and the melted Butter.  Bake at 400 degrees and bake for 8-10 minutes or until the Shrimp are fully cooked.

Baked Lemon Shrimp Recipe

2 TBSP Butter
1 Lemon Zested and sliced into thin slices
2 tsp Italian Seasoning
1 Lb shrimp de-veined
5 Garlic cloves, minced
Salt & Pepper to taste

Melt the Butter in a microwave safe dish.  Place the Shrimp on a rimmed baking sheet and sprinkle with the Italian Seasoning, minced Garlic, Salt & Pepper.  Top with the Butter and add the Lemon Zest and Lemon slices.  Stir around to combine everything.

Bake 400 degrees for 8-10 minutes, or until shrimp turn pink and start to curl in.

Oatmeal Banana Muffin Recipe

I am back with more Banana bread!  But this time to mix things up I turned this one into Banana Bread Muffins!  These muffins also have oats in them which changes the texture of the bread.  These were very yummy and we all loved them and I will absolutely be making these again.  I found the recipe here and just baked the little babies for a shorter time than the bread called for. 


You will need Flour (I used both white and wheat, Cinnamon, Baking Soda, Oats, Sugar, Baking Powder, Oil, Salt, Brown Sugar, Buttermilk (I used Milk with a splash of white Vinegar), really Ripe Bananas, and Eggs.  Not pictured but you will also need Vanilla extract.

In a bowl add the Flour, Sugar, and Brown Sugar.

Then add in the Cinnamon, Baking Soda, Salt, and Baking Powder.

Then stir in the dry oats.

Mash up the Bananas.

Combine the Oil and Buttermilk.

Add in the Vanilla Extract.

In a separate bowl crack your Eggs and lightly beat them.

Add the Eggs and mashed Bananas into the Buttermilk mixture.

Now start slowly adding in the Flour mixture.

Yep, I said slowly.

Mix until just combined.

Line a muffin tin with liners and fill the cups about 3/4 full with batter.

Bake 350 degrees for about 20 minutes or until a toothpick comes out clean.

Oatmeal Banana Muffin Recipe

1 C Flour
1/2 C Whole Wheat Flour
1/3 C White Sugar
1/3 C Brown Sugar
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 1/2 tsp Cinnamon
3/4 C Oats
3 very ripe Bananas
1/3 C Buttermilk (I used just shy of a 1/3 C of regular milk with about 1 TBSP of White Vinegar that I let sit for 5 min)
1/4 C Canola Oil
1 1/4 tsp Vanilla
2 Eggs, lightly beaten

Combine the dry ingredients in a medium sized bowl.    Mash the Bananas then combine with the Buttermilk, Oil, Vanilla, and Eggs.  Mix thoroughly.

Slowly add the wet and dry ingredients and mix until just combined.  Pour the batter into a lined muffin tin.  Bake 350 degrees for 20 minutes, until a toothpick comes out clean.

Happy April Fools' Day!

Isn't April Fools' Day a fun holiday?  In the past I would always play a prank on my husband.  Often times it would involve me being pregnant which always made me laugh like crazy. 

One year I played the trick of all tricks.  My husband loves fish and has always dreamed of having a gorgeous Salt Water tank of his very own.  A few years ago he had a very small 8 gallon Salt Water tank with 2 fish, a star fish, a shrimp, several crabs, and some snails.  One day a random creature appeared in the tank.  It looked a lot like a worm.  Really squishy and gooey looking.  He wasn't sure what it was.  He told me that where you are using live sand and live rock to make a Salt Water tank anything could be growing in the tank.  He didn't have time to take it to the fish store to be inspected so he sent me with the creature in a baggie.  I got to the fish store and they told me that it was a good creature.  A Sea Squirt.  These critters help clean the tank and keep things good and healthy.  Being a real prankster..I called my husband and told him that it was a terrible creature and that we would have to quarantine all the critters of the tank and start the tank over from scratch.  You see, starting a Salt Water tank is a super involved process.  You have to get the special live sand and the live rock.  You have to get the water to the proper salinity, then let the rocks and sand live together in the water for about 30 days before you can introduce any sea life.  My husband was so upset and shocked.  Then I yelled "April Fools!"  He was so shocked that I had gotten him so good.  I will always love that perfect joke!  Sadly, shortly after I brought the Sea Squirt home the shrimp started to eat him.  We were very sad when Steve got eaten by the shrimp.

Today for April Fools' Day I wanted to play a prank on my 4 year old.  I didn't want to do anything that would upset her.  I made up a batch of Jello and poured it into drinking cups.  When she woke up I told her that I had made some very yummy juice.  I also told her to be very careful not to spill as I had filled the cup pretty full.  She sat down at the table and very carefully brought the cup to her lips and tipped it back to enjoy a sip of the sweet beverage.  After a couple of tries she realized it was Jello!  It was so funny and we had so much fun playing the prank.
